A FISHtory Lesson

Good Morning! 

A couple notes:

A Spoiler Alert OF the Spoiler Alert: This week we will have a mini takeover of our Pick of the Week collection. Our friends at Mamaleh's in Cambridge will be offering Latkes for the Vegetarians and as an add-on in the Prepared Food section (alongside Vegetarian Soup of the Week from Forge, Empanadas from Buenas, and more). They will also be baking up Mini Challah for the Bread of the Week and Baba Ganoush as the Mezze of the week. Go on, treat yourself. 

Reminder: Please leave the black bags out for your drivers and they will haul them back to us. We have them professionally cleaned and ready to get back into the rotation. We aim to use as little packaging as possible, and to pack in re-usable or compostable materials whenever we can. It's a bit more effort, and it costs a bit more, but it makes us feel all warm and fuzzy inside, like there's a reusable, insulated bag around our hearts.

We hope you get a moment today to unleash yourselves from your laptops, your interminable to-do list, and the grind of a 24-hour work schedule to get outside, look up, and enjoy the sun. A few moments of its warmth will help fill up an empty tank. You deserve it.

A FISHtory Lesson

This week's fish is Fluke from Red's Best at Fish Pier. Fluke, sometimes called Summer Flounder, is much more prevalent in the summer months in New England waters. But each winter, for a short while, they take a trip North from their toastier homes to pop into our frigid waters. We are in the middle of that brief but tasty séjour, and are grateful for it. 

This is a wonderfully versatile fish. Fluke meat has a delicate flavor with a fine, flaky texture. The filets are not too thick, so you can plan to have dinner on the table in 20 minutes without too much hullabaloo. (And yes, the pandemic has been so long and aged me so much that I now speak with the parlance of an 80-year-old man, uttering things like "malarkey" and "hullabaloo" while sucking on a Werther's Original and complaining about the price of Ginger Snaps.)

I love to treat fish with the Holy Trinity of butter, capers, and lemon. This sauce makes for a bright, buttery bath for everything from fish to pasta to chicken. I'd drink it straight from the pan like a feral animal if it wouldn't horrify my friends and family, so I wait till they're not looking.  Once you this sauce is in your arsenal, riff away on it to suit your taste--add herbs, shallots, crunchy red onion, black olives, or wine. And more wine.

Chicken Pot Pie - Story time, I have lived on this earth for many years and it wasn't until this year that I realized my mother and I have VERY different opinions on how to make chicken pot pie. This is my favorite way to make chicken pot pie and, as a chicken farmer's daughter, I feel like I have some clout to say it is the best way. For those whose nightmare it would be to cook the willy nilly way I do, here's another good recipe with actual amounts! 

Scrambled Eggs with Micros - It's a breakfast for every meal kind of week. 

Beet and Apple Salad - A quick and easy salad to make for lunch or dinner! 

Spanish Style Cusk - 20 minutes to dinner! 

Spinach with Golden Raisins and Pine Nuts - Add your leftover fish and enjoy!

Tlayudas - So good. Shredded lettuce is great, but I gotta say that I prefer very thinly shredded cabbage as a garnish here. Something tells me you may have some cabbage on hand right about now.
Any Root Vegetable Soup* - It's winter in Maine. This recipe is your friend. Celery root really adds something special to this soup. As for garnishes? Don't skimp on the lemon juice and while "optional," the chile flakes add quite a bit of depth. If you're feeling fancy, make a chile oil out of those chile flakes and garnish with that and something green. Parsley? Yes! Chives? Sure!
Coconut and Ají Amarillo Braised Chicken - Get some ají amarillo paste and get crazy. Sub greens for the peas! Sub cauliflower for the chicken! Basically, ají amarillo paste + coconut milk = secret braising weapon.

Fish Chowder with Old Fashioned Flavor - You live in Maine. You have haddock. You have potatoes. If you can't trust Marjorie Standish for a chowder recipe, who can you trust? Super simple and comforting. Really hope that the "old fashioned flavor" is the MSG, which is obviously optional, but don't hate!
Tunisian Spinach Rice* - Lovingly referred to as "steamed dinner" in my house. Leftovers are awesome with a fried egg. Harissa is a welcome garnish.
