Snowy Comforts

Who doesn't love a snow day? Thinking back to childhood, snow days always meant hot chocolate with lots of marshmallows and my brother (hi, Hughbie!) and me ending up in some sort of snow/ice fight. We asked some of the team to share their snowy comforts/what they're entertaining themselves with while inside, and here are some of their responses: 

Olivia (Logistics Manager, Glassblower, and the most meticulous person on the team) has been visiting her octogenarian parents and reminded of her family's LOVE of seafood! Some of their go-to recipes include: 

  • Dr. Yum's Brown Sugar Salmon
  • "Shrimp + green peas (just confirmed with Mom there are no other ingredients)"
  • "Soy sauce + sugar shrimp (this version is pretty close to what Mom does; keeping the shells on holds in more sauce!  I'm tempted to give this a go w/ tofu or chicken sometime.)"

Beyond that, you can catch Olivia watching The Crown on Netflix or listening to the detective comedy podcast, Victoriocity!  

Joe (General Manager for Southeastern ME and Seacoast NH, Cat Worshiper, and Condiment Connoisseur) and his Mrs. have been watching the newest season of Ozark and the Righteous Gemstones. He also recommends "the novel Klara and the Sun by Kazuo Ishiguro is stark and slow to unravel. It’s been perfect winter reading with the snow coming down right outside the window." And on his drives down to Massachusetts, you can find him listening to The Trojan Horse Affair Podcast from The New York Times. 

Erin (CEO & Co-Founder; Lover of Bad Puns & Frank the Dog): "In this wintery mix, I'm in the midst of re-reading Black White and the Grey: the Story of an Unexpected Friendship and a Beloved Restaurant by Mashama Bailey and John O. Morisano. "It describes the rollercoaster of hardship and triumph between two unexpected partners and friends as they turn an old segregated Greyhound Bus station into a comforting, convivial hub for food, drinks and creativity.

Three parts memoir, one part cookbook, I find myself wishing for a Negroni (Or two, is it 5pm yet?) as I flip between recipes for Carrots with Harissa, Country Pasta and Greek Wings. 
Bailey was just nominated for her second James Beard Award in the Outstanding Chef category. And because I'm a lazy genius, my second snowy day rec is Season 6, Episode 1 of Chef's Table featuring... you got it, Mashama Bailey. "
 
Frank the Dog (Chief Dog Officer of Family Dinner; Stats: Age: 14.5, Number of Teeth: Zero):
"On a snowy day, and any day really, I like to wake up and have scrambled eggs, one but preferably two. My preference is Feather Brook Farms egg, with Kriemhild butter, cooked low and slow, according to the philosophy and teachings of Mark Bittman."
 

Shannon (Operations Manager, veritable "Card Catalog" of reference information, plant & soil junkie): "Cabin fever usually sets in within an hour of waking up, so my snow day usually involves lots of baking. Pancakes, cookies, and pot pies to clear out leftover odds and ends fill my day! I have also been catching up on the Marvelous Mrs. Maisel and The After Party with Tiffany Haddish as well as reading Anatomy: A Love Story written by one of my favorite podcast hosts, Dana Schwartz!"

RECIPES (ME/NH)

Garlic Butter Steak Tips - That tiny bit of warm weather made me want to grill but I'm not hardcore enough to do so in a foot of snow, so this is a rock solid Plan B. Steak and butter and parsley? Yes, please.

Roast Potatoes - The Kennebec potatoes in this week's shares are very similar to Yukon golds and are super versatile. If you roast them, you're going to want to have leftovers for home fries. Feel free to mash, too.

Grilled Onions - Also great on the grill/griddle are these thick cut onions. Sprinkle some balsamic for a tasty side, break up and put on a burger, cut up and throw in your roasted potatoes or just about any sauce... you get the idea. They can be hard to flip without the rings coming apart but a couple toothpicks solve that problem.

Mayonnaise Baked Fish - Classic New England, right here. My partner grew up with this and it's a version of our go-to preparation, especially for a fish like pollock that can dry out.
 
Swiss Chard - The days getting a bit longer mean we have more greens in our lives, which makes me pretty stoked. I know that I'll be thinking differently when we're still knee deep in chard in April, but this list of recipes will definitely keep things interesting. Green curry, rice noodles, and chard; bucatini and chard; seafood and chard; chickpea, poached egg, and chard: YES, PLEASE. Solid lineup of recipes here.

Shiitake Mushroom Sauce - Top your fish, chicken, pasta and any other yummy dinners you have planned! 

Smoked Mackerel - My friend Hannah says the only way to do mackerel is smoked, and with a few things you may already have at home, you can make it in no time! 

Pollock with Onions and Carrots - Pollock with onions and carrots a few ways! 

Cabbage Chips - I am expanding my attempts to have you all make chips/fries from your root veggies to include cabbage because, why not?

Spinach Ricotta Casserole - On a blistery cold day, this sounds like all we need right now. Or go for a Spinach Ricotta Grilled Cheese with your Sesame Semolina Loaf!
