The New Jam

This week we are bringing jam from our friend Kelby at Olde Haven Farm into the Whole and Double Shares in Massachusetts. Not to play favorites but the folks in Maine got it last week, one week ahead. (We love you all equally, we promise.)

These jams are wonderfully delicious. I had an episode a few weeks back where I sat down on a Sunday morning with a fresh loaf of bread from A&J King, a stick of butter and a jar of Kelby's Strawberry Basil jam. The results were neither pretty nor something I'm particularly proud of, but it was really tasty. I found jam in my hair hours later.  I say give it a go. 

The jams are almost as great as the folks who make them and the story of their farm. From their site:

"We are those people.  The kind of people you hear about and say "they did what!?!"

We moved 2000 miles from a crowded suburb to a 90 acre parcel in Central Maine, where we knew nobody, to start a farm.  What appealed to us was a simpler life and the values of small towns.  We loved Maine and its beauty and looked for property out here for several years before making the move.  When we found the property we wanted, we put in an offer sight unseen (other than online).  See?  Crazy.  But we couldn't be happier and we have been working diligently ever since on turning the piece of land into a working farm."

And a bit about their practices:

"Here at Olde Haven Farm, we believe in knowing where our food comes from.  We believe that our animals deserve a happy healthy life with the ability to do what comes natural to them.  

Chickens forage for bugs in the fields.  Sheep graze on lush green pastures with the goats near by.  Ducks have access to ponds any time they want.  We also believe in using the resources that our land provides for us, and being good stewards of our land.  We do not want to destroy the land but build it up, improving soil, trees, and fields.  We practice rotational grazing to allow land to recover from animals and to provide the animals with the best grazing and nutrition available.  Our animals are raised hormone and antibiotic free and our produce is MOFGA Certified Organic
."

If you can't get enough, show them some love and order online. And if ever the universe gives you the chance to eat their pork sausages, take that opportunity in the name of all that is Holy. They will blow your mind.

Pork Chops - We're pretty in lurv with Broad Arrow pork chops. At home, we will usually use an immersion circulator and then sear in a screaming hot pan but will also pan roast. If pan roasting, there're some tricks to keeping it juicy while still getting a good sear so it's worth reading through that whole recipe.
Mackerel with Spicy Napa Cabbage Slaw - Love me some mackerel. Rich and sweet and stands up to all sorts of flavors, like these some napa cabbage slaw or these Sweet and Spicy Mustard Greens
Haddock Fish Chowder - I mean... c'mon.
