Our Roots and Kind Roots

When Family Dinner was getting started back in 2017, we worked out of Foundation Kitchen, a shared culinary space in Somerville, MA. We would gather on Saturday, pack shares and then drink beers in the parking lot, watching a veritable circus of Somerville locals parade by. 
A few years in, we were bursting at the seams and moved into our own facility in Woburn, MA and newly into Portland, ME at Fork Food Lab. (Don't worry, the parking lot beers tradition continues - you should come join us sometime!)
One of the best parts of engaging in a shared kitchen is meeting other food entrepreneurs, makers, and producers, and getting their incredible products into your shares. It was through Foundation that we met Stephanie at Kind Roots, the mastermind behind this week's veggie burgers in the Massachusetts Vegetarian shares.
 
"Stephanie Lundgren, the Kind Roots founder and CEO, is a 26-year-old Virginia Tech alum who was born and raised in Massachusetts. She created the company back in June of 2020, amidst the beginnings of the COVID pandemic.
 
Stephanie went vegan back in 2017 as a result of a combination of her yoga teacher training and watching the Earthlings documentary. Cooking vegan food for her family and friends quickly became her greatest passion and she quit her job in a medical lab to create her own path doing something she loves: creating delicious vegan food with a positive impact. 
 
The Kind Roots Veggie Burger was born out of a frustration with the store-bought options out there. Stephanie set out to create a veggie burger that combined the best of both worlds with incredible flavor, filling texture, and amazing list of ingredients...and she's done it! The Kind Roots Burger is in a category of its own."
 
The mission of Kind Roots Co is something we can all feel, especially in this moment: "To inspire kindness to the Earth and all who walk it."

Beet and Pear Salad - A giant bowl of this salad has your name on it! It should take no time to put together and it's hearty, too. Have any other root veg lying around? Roast them up and add to the bowl as well.

Stovetop Popcorn - You would not believe how divisive popcorn kernels are at Family Dinner. I'm on teams Two Thumbs Up. (I bet you are, too.)
 
Pesto, Sausage, and Tomato Pizza - I can't leave the pesto alone. For those of you getting the pizza dough, it'll be frozen so I'm going to quote myself from a handful of weeks back: "For the dough, defrost overnight in the fridge and then a few hours before you plan to shape it, let it rise, covered, on your counter. It'll be way easier to work with."
