New Fin in the House

Since the dawn of Family Dinner (which feels like it was in the Mesozoic Era when dinosaurs roamed the Earth, but in fact was only in 2017), we have been sourcing seafood from our friends at Red's Best and at Ipswich Shellfish Company.  

We will certainly continue to do so but this week we wanted to introduce a new face to the line up: True Fin seafood which hails out of Portland, ME and is our main seafood purveyor there.

Jen Levin is the CEO, President and is a Total Bad Ass. Jen believes that the best businesses are also good for people and the environment. She has dedicated her career to sustainable use of renewable resources, including working on issues related to hunting, trapping, and forestry. Most recently, Jen managed the Sustainable Seafood Program at the Gulf of Maine Research Institute where she developed a passion for the seafood industry in New England and uncovered the untapped potential for high-end seafood from this region. 

The True Fin team knows fish. They go to sea to teach safe handling practices that preserve the integrity and quality of the catch. They collaborate with chefs on new ways to prepare the best meals. Using state of the art techniques and technology, True Fin is able to bring fish to chefs and home chefs faster than ever before. They are fishermen, scientists, and chefs with a unifying passion for seafood and the Gulf of Maine.

True Fin is on a mission to create a more economically viable local seafood industry, keep fishermen fishing, and make local seafood accessible to consumers. They buy exclusively from Gulf of Maine harvesters, and they pay them fair prices for their catch in exchange for quality care aboard the boats. 

The Fish from True Fin is coming to us frozen, using their Super Frozen technology which cools at -60 degrees as soon as it comes off the boat to ensure peak freshness. "At True Fin, we buy directly from Gulf of Maine harvesters as soon as the fish hits the dock. This means it is never sitting at an auction or other warehouse for days before being processed. We then process and super freeze the fish at the height of freshness. Our super freezing technology ensures that the integrity of the quality is maintained for perfect preservation."

Tuna Kofta in Flatbread - Josh Niland is a king of seafood and utilizing as much of the fish as possible. Check this out and do some more digging into this fella.
 
Spicy Tuna Roll - Making sushi is fun and tactile. And tasty.
 
How to Make Cooking Substitution - This is a very handy guide especially when you are looking at things like greens and thinking, how can I use this in another recipe that I have...? (I've sat there thinking it a time or two). 
 
Garlic Confit - A preservation method from pre-refrigeration days that can lend to making incredible mashed potatoes, pasta dishes, or decadent veggies. 
 
Beet, Potato, and Pollock Tray Roast - Maybe it's because I'm listening to my favorite BBC History podcast at the moment or because I couldn't find this recipe elsewhere, but hop across the pond for this simple one pan dinner! (Also, doing some homework for you: 180-200C = 356-392F.)
 
Roasted Beet and Carrot with Honey Balsamic Glaze - Beets are one of my favorite winter veg because they add such a pop of color to dishes in the middle of the winter!

Reverse-Seared Steak Recipe - The preferred method of cooking steaks and chops in my house.

Creamed Spinach - Steakhouse classic.
 
Roasted Garlic Tomatoes - These would be great on your cod, on some crusty bread as seen in the pics here, or alongside your steak and creamed spinach.
 
Mashed Butternut Squash - This is tasty by itself but is super versatile. My partner, Krista, recently did a version of this as we were swimming in squash. We had some as a side, used some in homemade ravioli with ricotta, and froze the rest.
 
Quick-Braised Cod With Herbed Yogurt - Easy weeknight cooking. Also, I want this very badly.
 
Squash Torchetti - This calls for Blue Hubbard squash but any will suffice.
