There is a new kid on a very familiar and awesome block. Avery Perry, left, has joined the team at  at Seven Hills Pasta Co, who we love to work with at Family Dinner.  Avery, formerly of Nella Pasta and Law of Pasta, will run the newly formed Fresh Pasta department at Seven Hills and we couldn't be more thrilled. (It is  all about us, right?)

Avery is joining a stellar team. Seven Hills Pasta Co is a family run business in Melrose, MA, specializing in producing traditional artisan dry pasta. The company is run by Giulio, pictured, and his wife and Massachusetts native Carol, not pictured. (Carol, I'm sorry. I'm literally the worst. How did I leave the woman out of a part woman-owned business. The shame!)

The dried product, which you have seen in your shares is absolutely delicious and the process is slow and full of love. From their site:

"Soft dough is gently kneaded in our pasta machines imported from Italy. As the pasta is extruded through custom bronze dies, it acquires the characteristic rough texture that even the silkiest of sauces will cling to. Finally, the pasta undergoes a 24 hour drying period thus gaining the firm al dente quality that separates an ordinary plate of pasta from a truly memorable meal."
We asked Giulio what got him into this tasty craft: "Definitely spending every Sunday rolling out fresh handmade fettuccine with my Italian grandmother (Nonna Lina!) back at home in Rome."
That sounds like an incredible space in which to learn and share time with family. Shout out to Nonna Lina, grazie di tutto!
For Avery, his pasta journey doesn't involve a Nonna (no one is perfect) but is still full  of love:
"Coming from the restaurant world, I had a unique opportunity to study the art of pasta making whilst being challenged to develop unique flavor profiles. At that point I fell in love. "
People often think of pasta as a heavy bowl of comfort food, meant for the depths of a New England winter when you feel like you're living beyond the Wall. Avery and Giulio contest that notion and shared with us their favorite summer dishes:
Giulio: "Seven Hills Fusilli with pine-nut basil pesto and fresh cherry tomatoes. Great served either warm with shards of aged parmigiano reggiano or cold as pasta salad on a hot day."
Avery: "Seven Hills Gigli, tossed in a Bacon Balsamic Vinaigrette, with Candied Beets, Baby Arugula, topped with Whipped Goat Cheese. " 
I'll take two of each AND I'll bring the wine.
This week we have a dry pasta from Seven Hills in the Double Shares and a Fresh Pasta in for the add-on pasta of the week. We hope you enjoy and you can expect much more from them soon!
