LOOK AT THAT BABY COW! Our buddy Seamus here from Feather Brook Farm is now 6 days old. He spends his time getting drunk on milk, getting scratches and lounging in the sun. That's the life.

A few notes before we get into the good stuff:

  • If you need to skip a share, please do it before Sunday evening. Processing refunds and cancellations on Monday is logically complicated and costly on our side. You can find info on how to skip here, or you can always email us!
  • We have over 700 people on the waitlist, so the "Store" is currently closed on the website. We are accepting folks in from the waitlist bit by bit. 
  • If you are an existing customer and would like to make changes to your subscription, please email us today and we can take care of this for you!
  • We will be taking milk bottles back starting this week. We are still not taking bags (soon we hope!)

CHEESE TREES

When I hear the words "Farmer's Cheese" it has always made me laugh. Like, aren't all cheeses the product of farmers in one way or another, why does this one earn that moniker?

Or is there some plant that magically sprouts cheese in a perennial fashion?

And if there is some mythical cheese that actually grows on trees, where the hell do I find these guys to plant all over my yard?  Because if that exists, I could die happy.

Farmer's cheese is like fresh pressed cheese with the consistency of dense ricotta. It is wonderfully versatile and ready for your tacos, veggie pasta dishes or just slathered on toast (we know you've been baking bread, people!) with a touch of honey. 

When Luke and Catarina from Brookford Farm suggested it for the shares this week, we jumped at the chance to introduce it to the shares. We hope you enjoy!

RECIPES

Hoppin John: Rice, Beans and meat. Doesn't get any easier than this Southern comfort dish.  It calls for Ham Hock but last week we made it with left over pork tenderloin. You could also use chicken, sausage or tempeh.

Simple Bolognese: Put the carrots, the pasta and the ground beef to good use.

Sauteed Fiddleheads: Fiddleheads = Spring. Use these guys ASAP, they will lose flavor. Sautee in some oil with salt and pepper, do not consume raw.
