While the beginnings of the Thanksgiving Holiday are marred with atrocities (here is a great podcast about the origins of Thanksgiving from an Indigenous perspective), our team appreciates the chance to spend time with our friends and families over a meal. That being said, I asked folks what was their favorite bite (singular) was and here were their responses (plural). 

Erin, CEO and Co-Founder and Frank, Chief Dog Officer - Both came in with stuffing and gravy sandwiches the day after Thanksgiving.

Joe, General Manager for Maine/New Hampshire - "Mashed potatoes (with only as much potato as is needed to bind heroic quantities of butter and cream) and gravy. And stuffing. Lots of stuffing". AND "picked meat off the turkey carcass" AND "S**t… pie. Pecan pie. Also."

Olivia, Logistics Manager - Creamed Spinach AND Potatoes au gratin AND Crescent Rolls 

Aaron, Software Techno- Wizard (definitely an official title) - "Mom's homemade orange-cranberry relish on the tip of a turkey slice" AND "but really it's the crescent rolls" 

Shannon, Me, Operations Manager - Although I have a major sweet tooth and any apple dessert is not safe around me, I love a bite that has the perfect mix of potato/cranberry/chicken. (Because as a chicken farmer's daughter why would we have turkey?)

Roasted Cabbage Steak - Simple Weeknight meal or weekend delight. I will be the first to come our Pro-Cabbage. I love these dense delightful veg and if you aren't feeling a cabbage steak maybe sweet and sour braised cabbage would be more up your alley. 

Pollock Encrusted with Caramelized Onion - Why yes this sounds amazing. 

Kale and Butternut Salad - I made a similar salad a few weeks back and it was the first time I served my pops kale and he didn't complain. Tis delicious! 

Steamed Sea Bass with Pesto - Swap the Sicilian Pesto with a Microgreen pesto et voila! 

Radicchio and Pear Salad - The bitterness of radicchio meets the sweetness of pears in this delectable salad! 

Leftover Thanksgiving Pita - Just shove all that leftover goodness into the pita. Yes. And reminder, the pita have a short shelf life. If you are going to wait a few days before eating them, pop them into the freezer! They defrost beautifully!

We're very excited that, at long last, Maine now has its own tempeh producer, Tootie's Tempeh! We've been waiting (impatiently... trying not to loose our tempeh) for them to launch and that time has finally arrived. Worker owned and plastic-free, to boot.

Seared Salmon and Greens - Could sub the bok choy with the tasty chard some of you are getting. Quick, super healthy, pretty dang scrumptious.
 
Breakfast Strata With Sausage and Mushrooms - Oh, man. What a tasty way to please a crowd. And here's a variation using bagels... it just might be a good enough excuse to not scarf them fresh.
