RECIPES

Salmon Collars:  Salmon collars are It is the part of the fish behind the head and gills that extends to where you sliced off the fillet.  Why the hell would I eat this? From honest-food.com: " Well, it is insanely rich, meaty and just plain fun to eat. Lots of rich, fatty meat nestles in pockets around the fins, and then you get some regular meat at the top of the collar that you missed with the fillet knife. In all honesty, I’d rather eat collars than the regular fillets." When we asked our friend and local Fish God Jimmy Rider from Hooked Fish shop how to cook these he said  "Chicken Wings! Cook 'em like you would a chicken wing and then GET ON IN THERE!".  This Bon Appetit recipe is a tad intricate but the marinade is delicious. If you don't have the time or energy coat it with a bottled marinade and get it on the grill. You can also broil these little gems.

Garlic Butter Salmon in Foil: The cooking in foil move saves on clean up and traps the flavor into the fish. Lazy and delicious is our new MO.

Mushroom Orecchiette:  Make this dish when you're alone so you don't have to share it with anyone. A nice roasted zucchini side dish will allow you to say you had salad for dinner.

Lion's Mane Mushroom Burger: Where have you been all my life, Little Weirdo Burger? So good. 


TIPS AND TRICKS

Ordering "Kama" Out on the Town
. Next time you are at your favorite sushi or Japanese restaurant and you see "Kama" on the menu, GET IT. These are fish collars, typically an appetizer, cooked to perfection. They are charred, salty, fatty, and sweet. As long as you're not squeamish, don't hesitate to pick apart every last collar bone and make sure you get the good stuff. It's also a great way to see how professional chefs prepare these collar bones, so you can perfect your own recipe. Enjoy!
